This thick, plump rice from the Veneto region has a high starch content which gives a super velvety rice pudding!

 

Ingredients for 6 people:

Quarter of a teaspoon of salt
1 cup Riso Margherita Vialone Nano rice
5 cups of milk
3 cups of sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon, plus extra to garnish
Half a teaspoon of freshly grated nutmeg

Method

In a large pan bring 2 cups of water to boil, add salt and rice.

Cover and simmer over a low heat stirring once or twice until the water is almost fully absorbed (for about 15 – 20 minutes)

Add the milk and sugar. Increase the heat to medium high and bring to a simmer for a few minutes.

Reduce heat to low and continue simmering and stirring for 15 minutes.

Add vanilla, cinnamon and nutmeg to the rice pudding.

Cool and serve at room temperature, sprinkle with cinnamon to garnish.
