This recipe made with aged asiago cheese is perfect for a summer lunch or dinner and it is really easy to prepare. We have used farfalle pasta but you can choose any pasta shapes that you have in the cupboard.

Ingredients for four people

400g. Farfalle pasta (butterfly shaped)

200g Smoked Norwegian Salmon

50g Aged Asiago Cheese

250ml Double cream

Salt, thyme and mint leaves

Method

Place a pot with water to boil for cooking the pasta. In the meantime prepare the Asiago and salmon sauce by placing the salmon cut in little pieces and the double cream in a pan. Heat gently for 10 minutes and add the mint leaves. When the cream starts boiling, add the asiago cheese cut in pieces. Mix and leave to rest for a while.

When the water start to boiling add the salt and the pasta in the pot and cook according to the directions on the pasta box. Once it is ready, drain from water and place in the pan wit the sauce. Stir for two minutes then serve in deep dish with a decoration of thyme and mint leaves on top.
