Recipe for Risotto dell’Amore.
This unusual, savoury dish ‘Risotto of Love’ combines fruit and rice and works really well. The strawberries give the risotto a burst of flavour without too much sweetness as well as a beautiful colour. We think it’s a great recipe to try for a Valentines meal with a twist!
Ingredients for 2 people
200g of Riso Margherita Carnaroli rice
2 tablespoons of extra virgin olive oil
200g of strawberries
2 tablespoons of Calvados (optional)
500ml of vegetable stock
1 knob of butter
2 tablespoons of grated parmesan
Gently heat the oil and add the rice stirring continually until toasted.
Turn up the heat and wet the rice with 2 ladles of boiling stock, stir and then add half of the chopped strawberries.
Keep stirring and when the liquid has been absorbed add another ladle of stock.
After around 10 minutes add the remainder of the strawberries keeping some for decoration. Continue stirring the risotto and keep tasting the rice to make sure that it is not burning. If the rice is still hard add half a ladle of stock at a time to help it finish cooking.
Once ready remove from the heat, add the butter, the Calvados and the parmesan and leave to rest for 5 minutes before serving.
Decorate the risotto with the remaining strawberries.
