Recipe for Panettone French Toast with Mixed Berries

Panettone French Toast is a great recipe for a delicious dessert or a luxurious breakfast using left over Panettone slices. If yours disappeared well before Christmas it’s a great time to find bargain Panettone in the shops, most will have a best before date well into 2017. Ingredients for 4 people

3 eggs

80ml single cream

80ml milk

2 tbsps sugar

½ tsp. vanilla extract

2 rounds of panettone cut across horizontally about 1.5cm thick and quartered

Around 250g of mixed frozen berries thawed or fresh ones

2 tbsp. of icing sugar plus extra to dust.

40g unsalted butter

Thick cream or yoghurt to serve

Method

In a wide shallow bowl mix cream, milk, eggs, sugar and vanilla. Add the panettone slices one at a time, turning each one until coated and leave for 10 minutes pressing down from time to time until all the liquid is soaked into the panettone.

In the meantime, put half of the berries, 1 tbsp. of water and the icing sugar in a blender and blend until smooth. Pour into a bowl and add the remaining berries and set aside.

Melt half the butter over medium heat. Drain excess egg mixture from half the panettone slices and cook for 1 to 2 minutes on each side until golden brown. Keep warm while you melt the remaining butter and cook the remaining slices of panettone in the same way. To serve, place two slices on each plate, dust with some icing sugar and top with the berries and a dollop of cream.
