Lagane ccu Ricotta (Lagane Pasta with Ricotta Cheese)

This is a super easy (and healthy) Calabrian recipe for Lagane with Ricotta cheese, made with just two ingredients!

Lagane is the name for a type of pasta very popular in Southern Italy made just with durum wheat and water. You can now find authentic artisan Lagane pasta in the Pasta and Rice section of Vorrei’s website. Ricotta cheese can be found in most supermarkets.

Ingredients for 4 people:

360g Pasta Forte Lagane

250g Ricotta cheese

Grated Pecorino or Parmesan cheese

Salt, black pepper q.b  

Method

Cook the pasta in a large pan of salted boiling water.

When the pasta is al dente drain leaving a little of the pasta water in the pan, add the ricotta and stir well to coat the pasta.

Serve and sprinkle with the Pecorino and black pepper.

This dish is perfect with a good Italian dry white wine, I suggest Verdicchio Classico Superiore DOCG “Le Oche” and Falanghina DOC Ramì that are both organic and suitable for vegetarian.
