Easter is coming and we can’t wait to eat our chocolate egg and a big slice of Italian Easter Colomba cake to celebrate!

If you like to try something different there are some great recipes with Colomba Cake, so why not taste this traditional speciality and get baking in a creative, delicious way!

1) Colomba Cake Pudding

Ingredients

  • Colomba Cake (at least half)
  • 3 organic free range eggs
  • 40g sugar
  • 200g double cream
  • 400ml milk
  • Vanilla essence
  • 50g cocoa powder
  • Cinnamon
  • Mint Leaves

Method

  • Mix the eggs, milk, cream, sugar, cocoa powder, and vanilla essence in a bowl.
  • Place the Colomba slices in a round, tall baking tin and cover with the mixture.
  • Bake at 200 degrees for about 15/20 minutes.
  • Once ready serve by taking a spoonful out and placing it on a serving plate. Garnish with whipped cream and mint leaves and sprinkle with cinnamon.

2) Mascarpone and Colomba Cake Tiramisu Pots

 Ingredients

  • Colomba cake
  • 1 cup brewed espresso coffee
  • 1 cup Amaretto di Saronno
  • 500g Mascarpone cheese
  • Vanilla extract
  • Cinnamon
  • 150g brown sugar
  • Two raspberries per cup

Method

  • Beat together the mascarpone, sugar, vanilla and cinnamon in a bowl and set aside for a few minutes.
  • Cut up the leftover Colomba into small pieces and dip it in the coffee and liqueur.
  • Place in individual cups and cover with a layer of cream.
  • Add another layer of cake and one more of cream. Flatten the cream out on the top and sprinkle with cinnamon and sugar.
  • Garnish with a couple of raspberries.

3) Colomba Cake French Toast

Ingredients

  • Colomba cake slices
  • 500 ml milk
  • 200g brown sugar
  • 1 cup double cream
  • Cinnamon
  • 4 Organic free range eggs
  • Butter
  • Ready made custard to serve

Making

  • In a bowl mix the milk with 100g sugar, cinnamon and one cup of double cream.
  • In a separate bowl beat the eggs with a pinch of salt.
  • Dip the Colomba slices in the mixture then in the eggs and fry them in the butter.
  • Sprinkle with sugar and cinnamon. Serve hot with a side of custard.
